Soft, tender layers of sponge cake are filled with rich, velvety pastry cream and topped with a glossy chocolate ganache. Ingredients

For the Sponge Cake:

  • 200 g (1 cup) all-purpose flour
  • 5 g (1 tsp) baking powder
  • 2 g (½ tsp) salt
  • 4 large eggs, room temperature
  • 200 g (1 cup) granulated sugar
  • 5 ml (1 tsp) vanilla extract
  • 60 ml (¼ cup) whole milk

For the Pastry Cream Filling:

  • 500 ml (2 cups) whole milk
  • 120 g (½ cup) granulated sugar
  • 5 large egg yolks
  • 30 g (¼ cup) cornstarch
  • 30 g (2 tbsp) unsalted butter
  • 5 ml (1 tsp) vanilla extract

For the Chocolate Ganache:

  • 150 g (5 oz) semi-sweet chocolate, chopped
  • 120 ml (½ cup) heavy cream
