Ingredients

For the Beef:

  • 1.8 kg (4 lb) beef chuck roast
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2 g) black pepper
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced

For the Au Jus:

  • 240 ml (1 cup) beef broth

  • 1 bay leaf
  • 1 teaspoon (1 g) dried thyme

For Serving:

  • 6–8 hoagie rolls
  • 8–12 slices provolone cheese
