Ingredients

For the Pancakes:

  • 500 ml / 2 cups milk
  • 250 g / 2 cups all-purpose flour
  • 10 g / 2 tsp butter, melted and cooled
  • Pinch of salt
  • 3 large eggs, separated

For the Béchamel Sauce:

  • 500 ml / 2 cups milk
  • 40 g / 3 tbsp flour
  • 40 g / 3 tbsp butter
  • Pinch of salt
  • Pinch of nutmeg
  • Pinch of black pepper

For the Filling:

  • 30 g / 2 tbsp butter
  • 400 g / 14 oz button mushrooms, diced
  • 150 g / 5 oz cooked ham, roughly chopped
  • 100 g / 3.5 oz grated Swiss Gruyere cheese
  • Salt and pepper, to taste
  • Optional: 2–3 tbsp béchamel sauce to bind filling
