Introduction

Ingredients

For the Broth:

  • 6 cups (1.4 L) chicken broth
  • 1/4 teaspoon saffron threads
  • 1/2 teaspoon salt

For the Paella:

  • 3 tablespoons (45 ml) olive oil
  • 1/2 cup (80 g) onion, diced
  • 1/2 cup (75 g) red bell pepper, peeled, cored, and diced
  • 2 1/2 teaspoons garlic, minced
  • 1/2 teaspoon smoked paprika
  • 2 1/4 cups (450 g) short-grain rice such as bomba, calasparra, or arborio
  • 8 ounces (225 g) Spanish chorizo, sliced
  • 12 ounces (340 g) shrimp, peeled and deveined
  • 8 ounces (225 g) mussels, cleaned
  • 12 ounces (340 g) clams, cleaned
  • 1/4 cup (35 g) frozen peas, thawed
  • 2 tablespoons (8 g) parsley, chopped
  • Lemon wedges for garnish
  • Salt and pepper to taste
