Lizard & Stuffing
- 1 whole lizard with a central hole (about 2 kg / 4.4 lb) – ask your butcher to prepare
- 1 pepperoni sausage, skin removed
- 4 garlic cloves, crushed
- 1 large onion, grated
- 1 cup minced fresh herbs (parsley, thyme, etc.)
- 1/2 cup shoyu (soy sauce)
- Salt and black pepper, to taste
- Boiling water, as needed
Madeira Sauce
- 2 1/2 cups lizard broth (strained)
- 1 small glass mushrooms, sliced
- 1 glass dry red wine (240 ml / 8 oz)
- 1 tablespoon cornstarch
- Optional: additional seasonings to taste
