Groundnut Soup

Introduction
Groundnut Soup is one of West Africa’s most beloved comfort dishes, known for its creamy peanut base, deep savory flavor, and satisfying warmth. Whether served with rice, fufu, or bread, this soup brings together simple ingredients to create a rich and comforting bowl that feels like home. The combination of roasted peanuts, tomatoes, spices, and tender chicken (or vegetables) makes every spoonful full of depth and aroma. Ingredients
Protein and Base
- 500 g chicken pieces (1.1 lb), or beef, or goat
- 1 medium onion, chopped (100 g / 3.5 oz)
- 2 tomatoes, chopped (200 g / 7 oz)
- 2–3 cloves garlic, minced (6–9 g / 0.2–0.3 oz)
- 1 tablespoon grated ginger (10 g / 0.35 oz)
- 1–2 liters water (depending on desired thickness)
Groundnut Mixture
- 1 cup smooth peanut butter or ground roasted peanuts (250 g / 8.8 oz)
- 1 cup warm water (240 ml / 8 oz), for dissolving peanut butter
Seasoning and Flavor
- 1–2 tablespoons tomato paste (15–30 g / 0.5–1 oz)
- 1–2 teaspoons paprika
- 1 teaspoon curry powder
- Salt and pepper to taste
- 1–2 fresh chili peppers (optional)
Garnish (optional)
- Fresh parsley or cilantro, chopped
