Roasted Carrots, Potatoes & Onions with Stuffed Pork Loin

- 2 large onions, peeled and cut into medium pieces
- 2 glasses (480 ml) white wine
- ½ cup (120 ml) water or vegetable stock
- 2 tablespoons sugar
- 1 pinch ground black pepper
- 1 pinch ground nutmeg
- 2 tablespoons olive oil
- 1 tablespoon lard
