Ingredients

  • 2–3 lb (900–1350 g) beef chuck roast or stew meat, cubed
  • Salt and pepper, to taste
  • ¼ cup (30 g) flour, for dredging (optional, for thicker stew)
  • 4–5 carrots, peeled and chopped
  • 4–5 celery stalks, chopped
  • 2 small onions, chopped
  • 6–8 cloves garlic, minced
  • 1 small can (6 oz / 170 g) tomato paste
  • 1 can (14–15 oz / 400 g) diced tomatoes with juice
  • 6–8 red potatoes, chopped
  • 1 bottle or can (12–16 oz / 355–475 ml) beer, or 1 ½ cups (360 ml) beef broth
  • 1 cup (240 ml) beef broth (if using beer, add extra broth for more liquid)
  • 2 bay leaves
  • 1–2 teaspoons smoked paprika
  • 1 teaspoon chili powder (optional)
  • 1–2 tablespoons vegetable oil for browning
