Ingredients

Chicken and Potatoes

  • ¼ cup (60 ml) olive oil
  • 4 chicken thighs with skin and bone (about 1.5 lb / 680 g)
  • Salt and freshly ground black pepper, to taste
  • 1 lb (450 g) potatoes, cut into chunks (small red-skinned potatoes recommended)
  • 4–5 garlic cloves, thinly sliced
  • ½ cup (120 ml) dry white wine
  • ½ cup (120 ml) chicken stock
  • 2 tablespoons (28 g) salted butter
  • ½ tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon crushed red pepper flakes (optional)
  • ⅔ cup (100 g) fresh or thawed frozen peas

For Serving

  • Fresh parsley, chopped
  • Fresh lemon juice
