Shrimp Fried Rice

Ingredients

- 1 lb (450 g) medium shrimp, peeled and deveined
- 3 cups (450 g) cooked white rice, preferably chilled
- 2 cups (300 g) frozen peas and carrots, defrosted
- 2 tbsp (30 ml) soy sauce
- 2 tsp (10 ml) sesame oil
- 1 large egg, whisked
- 2 tbsp (12 g) sliced green onions, for garnish
