Walking Taco Casserole

Directions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef until fully browned. Drain excess fat.
  3. Add taco seasoning and water to the beef. Stir well and simmer for 5 minutes until sauce thickens.
  4. Stir in corn, black beans, and diced tomatoes with green chilies. Mix until evenly combined.
  5. Spread crushed tortilla chips in the bottom of the prepared baking dish.
  6. Pour the beef mixture over the tortilla chips and spread evenly.
  7. Sprinkle shredded cheddar cheese on top.
  8. Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and let cool for a few minutes before serving. Top with optional toppings as desired.
