Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Butter a 2-quart baking dish and set aside.
- Cook Rice: Bring water to a boil in a large saucepan. Add the rice, stir, reduce heat to low, and simmer until the rice is half-cooked, about 5 minutes. Drain and set aside.
- Cook Onions: Melt the butter in a large skillet over medium heat. Add the chopped onions and cook until they are translucent but not browned, about 8 minutes.
- Combine Ingredients: In the skillet, combine the cooked onions and butter with the partially cooked rice. Stir in the half-and-half, salt, and 1 ¾ cups of shredded Swiss cheese.
- Assemble Casserole: Transfer the mixture to the prepared baking dish. Sprinkle the remaining ¼ cup of Swiss cheese evenly over the top.
- Bake: Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.
