Steak with Mushroom Sauce & Creamy Mashed Potatoes

Instructions

  1. Prepare the Mashed Potatoes
    Place the peeled and cubed potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15–20 minutes, until fork-tender. Drain well. Mash with warm milk and butter until smooth and creamy. Season with salt and pepper. Cover and keep warm.
  2. Season the Steaks
    Pat the steaks dry with paper towels — this helps create a beautiful crust. Season generously on both sides with salt and black pepper. Let them sit at room temperature for about 10–15 minutes before cooking.
  3. Sear the Steaks
    Heat olive oil in a heavy skillet over medium-high heat. Add butter and let it melt. When the pan is hot and slightly shimmering, add the steaks. Sear for 3–4 minutes per side for medium-rare (adjust timing for preferred doneness). A golden-brown crust should form. Remove steaks and let rest for 5–10 minutes to retain juices.
  4. Cook the Mushrooms
    In the same skillet, reduce heat to medium. Add butter and sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until they release their moisture and turn golden brown with a deep earthy aroma.
  5. Build the Sauce
    Add minced garlic and cook for 30 seconds until fragrant. Pour in beef broth, scraping up any flavorful browned bits from the pan. Let simmer for 2–3 minutes until slightly reduced.
  6. Finish with Cream
    Stir in heavy cream and simmer another 2–3 minutes until the sauce thickens and becomes silky. Season with salt and pepper to taste.
  7. Assemble and Serve
    Spoon creamy mashed potatoes onto each plate. Place a rested steak on top or alongside. Generously drizzle mushroom sauce over the steak. Garnish with freshly chopped chives and serve immediately.
