Spicy Noodles with Seared Kielbasa, Shrimp, and Soft-Boiled Egg

Instructions

  1. Cook the noodles. Bring a large pot of salted water to a boil and cook noodles according to package instructions until al dente. Drain and set aside. Toss with a small drizzle of oil to prevent sticking.
  2. Soft-boil the eggs. Bring a small pot of water to a gentle boil. Carefully add eggs and cook for 6–7 minutes for a slightly runny yolk. Transfer to an ice bath for 3 minutes, then peel and set aside.
  3. Sear the kielbasa. Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Add kielbasa slices and cook 3–4 minutes per side until caramelized and slightly crispy. Remove from pan and set aside.
  4. Cook the shrimp. In the same skillet, add remaining 1 tbsp oil. Sauté shrimp 2–3 minutes per side until pink and opaque. Season lightly with salt and pepper. Remove and set aside.
  5. Prepare the sauce. In the same skillet, sauté garlic and ginger until fragrant, about 30 seconds. Add soy sauce, sriracha, and sesame oil. Stir to combine and coat the noodles in the sauce.
  6. Assemble the bowl. Toss the noodles with the sauce, then top with seared kielbasa and shrimp. Slice the soft-boiled eggs in half and place on top.
  7. Garnish and serve. Sprinkle with sliced green onions, sesame seeds, and cilantro if desired. Serve immediately while warm and spicy.
