Southern Stewed Okra and Tomatoes

Directions

  1. Heat a medium skillet or cast-iron pan over medium heat and add the olive oil. Once hot, add the okra and diced onion.
  2. Cook, stirring occasionally, for 3–5 minutes until the okra softens slightly and the onions turn translucent and fragrant.
  3. Add the minced garlic, sugar, salt, and Creole seasoning if using. Stir well and cook for about 2 minutes until the garlic becomes aromatic but not browned.
  4. Pour in the apple cider vinegar and stir for about 30 seconds. Most of the sharp vinegar aroma should cook off quickly.
  5. Add the crushed tomatoes along with their juices and pour in the water. Reduce the heat to medium-low.
  6. Simmer uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens and the okra becomes tender.
  7. Taste and adjust seasoning with additional salt if needed. The dish should taste bold and well-seasoned.
  8. Just before serving, swirl in the butter until it melts into the sauce, adding richness and shine.
