Instructions
- Preheat your oven to 180°C (350°F) and prepare a baking sheet by buttering and lightly flouring it.
- In a large bowl, beat the butter with sugar until creamy. Add the egg and egg yolks along with the vanilla extract and mix well.
- Sift together flour, baking powder, baking soda, and cocoa powder. Gradually incorporate the dry ingredients into the butter mixture using your hands, without over-kneading. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Roll out the chilled dough to about 1/4-inch thickness. Cut out cookies using a round cutter and place them on the prepared baking sheet. Bake for 10–12 minutes, just until set but not browned. Let cool completely.
- Once cooled, sandwich two cookies together with a generous layer of dulce de leche in between.
- To prepare the glaze, combine the powdered sugar with egg white and a few drops of lemon juice. In a small saucepan, make a light syrup by heating granulated sugar and water until sugar dissolves.
- Pour the hot syrup over the egg-white glaze and mix quickly. Immediately use the glaze to coat the tops of the alfajores. Let them dry completely before serving.
