Slow Cooker Ranch Beef Chops

Directions

  1. Season the beef chops with salt and pepper to enhance flavor.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef chops until golden brown to lock in juices.
  3. Transfer the seared beef chops to the slow cooker.
  4. In the same skillet, sauté onions and garlic until soft and translucent.
  5. Add the sautéed onions and garlic on top of the beef chops in the slow cooker.
  6. Sprinkle ranch seasoning evenly over the beef and onions.
  7. Pour beef broth into the slow cooker, covering the beef chops.
  8. Cover and cook on LOW for 6–8 hours, until the beef is tender and infused with ranch flavor.
  9. Remove the beef chops from the slow cooker and let rest for a few minutes before serving.
  10. Serve hot, garnished with fresh herbs if desired, alongside mashed potatoes, roasted vegetables, or a crisp salad.

Keto and Low-Carb Variations

• Substitute beef chops with boneless skinless chicken thighs for a keto-friendly alternative.
• Swap beef broth with chicken or vegetable broth to reduce carbs.
• Serve with cauliflower rice instead of mashed potatoes for a low-carb option.
• Adjust ranch seasoning to taste and dietary preferences.

Tips

• Choose beef chops with good marbling for tender, flavorful meat.
• Searing before slow cooking adds caramelized richness—don’t skip this step.
• For thicker sauce, mix 1 tablespoon cornstarch with water and add during the last 30 minutes.
• Add vegetables like bell peppers, mushrooms, or carrots for extra flavor and texture.
• Leftovers can be stored in the refrigerator for up to 3 days; flavors intensify over time.
