Step 1: Prepare the Sausage Filling
In a medium bowl, combine ground sausage, chopped onion, garlic, thyme, salt, and black pepper. Mix thoroughly until well combined.
Step 2: Prepare the Puff Pastry
On a lightly floured surface, roll out the puff pastry sheets. Cut each sheet into strips about 2 inches (5 cm) wide.
Step 3: Assemble the Rolls
Place a spoonful of sausage mixture along one edge of each pastry strip. Roll the pastry over the filling, sealing the edges. Brush with beaten egg to secure and give a golden finish. Sprinkle sesame or poppy seeds on top if desired.
Step 4: Prepare the Slow Cooker
Line the slow cooker with parchment paper to prevent sticking. Arrange the sausage rolls in a single layer, leaving a little space between each roll.
Step 5: Cook
Cover the slow cooker and cook on low for 2–3 hours or until the sausage is fully cooked and the pastry is tender and golden. Avoid opening the lid frequently, as it can affect cooking time.
Step 6: Serve
Carefully remove the sausage rolls from the slow cooker using a spatula. Serve warm with ketchup, mustard, or your favorite dipping sauce.
