Step 1: Prep the Slow Cooker
Place sliced carrots, celery, onion, and minced garlic in the bottom of the slow cooker.
Step 2: Add the Chicken
Season the chicken with salt and pepper, then place on top of the vegetables.
Step 3: Make the Sauce
In a bowl, mix cream of chicken soup, chicken broth, and dried thyme. Pour over the chicken and vegetables.
Step 4: Cook
Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is fully cooked and vegetables are tender.
Step 5: Thicken the Gravy (Optional)
If you prefer thicker gravy, mix cornstarch and water to create a slurry. Stir into the slow cooker 15–20 minutes before serving, letting it thicken while simmering.
Step 6: Serve
Shred the chicken with two forks or leave whole. Spoon gravy and vegetables over mashed potatoes, rice, or egg noodles for a hearty meal.
