Directions
Step 1: Prepare the Ingredients
Thinly slice the beef against the grain for maximum tenderness. Slice onions, bell peppers, and mushrooms (if using). Set aside.
Step 2: Sauté the Vegetables
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add onions, bell peppers, and mushrooms. Cook, stirring occasionally, until soft and caramelized, about 6–8 minutes. Remove from skillet and set aside.
Step 3: Cook the Beef
In the same skillet, add the remaining olive oil and increase heat to medium-high. Add the thinly sliced beef in batches to avoid overcrowding. Season with salt and black pepper and cook until browned, about 2–3 minutes per batch.
Step 4: Combine Beef and Vegetables
Return the cooked vegetables to the skillet with the beef. Mix well to combine and allow flavors to meld for 1–2 minutes.
Step 5: Add the Cheese
Lower the heat to medium. Place slices of provolone cheese over the beef and vegetable mixture. Cover the skillet for 1–2 minutes until the cheese melts completely and becomes gooey.
Step 6: Assemble the Sandwiches
Slice the hoagie rolls open, leaving a hinge on one side. Spoon the cheesy beef and vegetable mixture evenly into each roll. Optional: Spread mayonnaise or your favorite sandwich sauce on the roll before filling.
Step 7: Serve
Serve immediately while sizzling and hot. For extra crispiness, you can lightly toast the rolls before filling.
