Instructions
- Preheat Oven
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Prepare the Sweet Potatoes
- Toss sweet potato rounds with olive oil, salt, and pepper.
- Arrange in a single layer on the prepared baking sheet.
- Roast
- Roast for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.
- Add Feta & Honey
- Remove from oven and sprinkle crumbled feta over the rounds.
- Drizzle honey on top.
- Optionally, add fresh herbs like thyme or rosemary.
- Serve
- Serve warm as a side dish, appetizer, or snack.
Tips
- For extra crispiness, roast a few extra minutes and keep an eye to avoid burning.
- Try adding a sprinkle of chili flakes for a sweet-spicy kick.
- These can be made ahead and reheated in the oven for 5–10 minutes.
