Roasted Sweet Potato Rounds with Honey & Feta

Instructions

  1. Preheat Oven
    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Sweet Potatoes
    • Toss sweet potato rounds with olive oil, salt, and pepper.
    • Arrange in a single layer on the prepared baking sheet.
  3. Roast
    • Roast for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.
  4. Add Feta & Honey
    • Remove from oven and sprinkle crumbled feta over the rounds.
    • Drizzle honey on top.
    • Optionally, add fresh herbs like thyme or rosemary.
  5. Serve
    • Serve warm as a side dish, appetizer, or snack.

Tips

  • For extra crispiness, roast a few extra minutes and keep an eye to avoid burning.
  • Try adding a sprinkle of chili flakes for a sweet-spicy kick.
