Directions
- Preheat your oven to 350°F (175°C) and line a 9x13-inch (23x33 cm) baking dish with parchment paper or foil, leaving a slight overhang for easy removal of the bars later.
- In a large mixing bowl, combine the melted butter, graham cracker crumbs, powdered sugar, peanut butter, and brown sugar. Mix with a hand mixer or stand mixer on medium speed until well combined; the mixture should be thick, sticky, and glossy.
- Gently fold in ¾ cup of mini Reese’s Pieces, ensuring even distribution throughout the dough.
- Press the mixture evenly into the prepared baking dish. Using the back of a spoon or lightly greased fingers, spread and smooth the surface so it forms an even layer. The edges should be slightly pressed against the sides of the pan.
- In a microwave-safe bowl, combine the milk chocolate chips and 2 tablespoons of peanut butter. Microwave in 30-second increments, stirring in between, until the mixture is smooth, glossy, and pourable. Avoid overheating to prevent burning the chocolate.
- Pour the chocolate-peanut butter ganache over the prepared bar base. Using an offset spatula or the back of a spoon, spread the ganache evenly, making sure the corners are covered.
- Sprinkle the remaining ½ cup of mini Reese’s Pieces over the top of the ganache. Gently press them into the chocolate to help them stick.
- Cover the pan loosely with foil and refrigerate for at least 3 hours, or until the bars are firm enough to cut cleanly. For best results, chill overnight.
- Using the parchment overhang, lift the bars from the pan and place on a cutting board. Cut into 12–16 squares or rectangles depending on your preferred size.
- Serve chilled, or allow the bars to sit at room temperature for 10–15 minutes for a slightly softer texture.
