Reese’s Pieces Peanut Butter Bars

Directions

  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch (23x33 cm) baking dish with parchment paper or foil, leaving a slight overhang for easy removal of the bars later.
  2. In a large mixing bowl, combine the melted butter, graham cracker crumbs, powdered sugar, peanut butter, and brown sugar. Mix with a hand mixer or stand mixer on medium speed until well combined; the mixture should be thick, sticky, and glossy.
  3. Gently fold in ¾ cup of mini Reese’s Pieces, ensuring even distribution throughout the dough.
  4. Press the mixture evenly into the prepared baking dish. Using the back of a spoon or lightly greased fingers, spread and smooth the surface so it forms an even layer. The edges should be slightly pressed against the sides of the pan.
  5. In a microwave-safe bowl, combine the milk chocolate chips and 2 tablespoons of peanut butter. Microwave in 30-second increments, stirring in between, until the mixture is smooth, glossy, and pourable. Avoid overheating to prevent burning the chocolate.
  6. Pour the chocolate-peanut butter ganache over the prepared bar base. Using an offset spatula or the back of a spoon, spread the ganache evenly, making sure the corners are covered.
  7. Sprinkle the remaining ½ cup of mini Reese’s Pieces over the top of the ganache. Gently press them into the chocolate to help them stick.
  8. Cover the pan loosely with foil and refrigerate for at least 3 hours, or until the bars are firm enough to cut cleanly. For best results, chill overnight.
  9. Using the parchment overhang, lift the bars from the pan and place on a cutting board. Cut into 12–16 squares or rectangles depending on your preferred size.
  10. Serve chilled, or allow the bars to sit at room temperature for 10–15 minutes for a slightly softer texture.
