Potatoes Romanoff

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch (23×33 cm) baking dish with butter or cooking spray. The warm oven will help the dish develop a golden, bubbly top.
  2. Place the shredded potatoes in a large bowl of cold water. Swirl gently, then drain and rinse until the water runs clear. This step removes excess starch and prevents a gummy texture. Pat dry thoroughly with a clean kitchen towel.
  3. In a large skillet over medium heat, melt the butter and sauté the chopped onion until soft and translucent, about 5 minutes. The aroma of onions cooking in butter will start filling your kitchen with a comforting fragrance.
  4. Add the drained potatoes to the skillet with onions. Season with salt and pepper, and cook for 5–7 minutes, stirring occasionally, just until they begin to soften but remain slightly firm. This gives the potatoes a tender base while keeping them structured in the casserole.
  5. In a separate bowl, whisk together the sour cream, mayonnaise, Dijon mustard, Worcestershire sauce, and paprika. Taste and adjust seasoning if needed. This mixture adds a creamy tang that balances the richness of the potatoes and cheese.
  6. Gently fold the cream mixture into the cooked potato and onion mixture until evenly combined. Transfer everything into the prepared baking dish, smoothing the top with a spatula.
  7. Sprinkle the shredded cheddar cheese evenly over the potato mixture, followed by the chopped chives. For a little extra flair, lightly dust the top with paprika.
  8. Bake in the preheated oven for 30–35 minutes, or until the cheese is melted, bubbly, and golden brown. The edges will crisp slightly while the interior remains soft and creamy.
  9. Remove from the oven and let the casserole rest for 5 minutes before serving. This brief cooling period allows the flavors to settle and makes slicing easier.
  10. Serve warm, garnished with additional chives if desired. Enjoy the rich, comforting flavors of this classic dish with your favorite main course.
