Step 1: Season the Beef
Pat the chuck roast dry with paper towels. Season all sides generously with salt, pepper, paprika, and thyme, pressing the spices gently into the meat.
Step 2: Sear the Roast
Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned, about 3–4 minutes per side. This step builds rich flavor.
Step 3: Build the Flavor Base
Remove the roast and set it aside. In the same pot, add the sliced onions and cook until softened and lightly caramelized. Add garlic and cook for 30 seconds until fragrant.
Step 4: Deglaze and Simmer
Stir in the tomato paste and cook for 1 minute. Pour in the beef broth and Worcestershire sauce, scraping up the browned bits from the bottom of the pot.
Step 5: Add Vegetables and Roast
Return the roast to the pot. Arrange carrots and potatoes around the meat. Bring to a gentle simmer, cover, and reduce heat to low. Cook for 3–3½ hours, turning the roast once, until the beef is fork-tender.
Step 6: Prepare the Mashed Potatoes
While the roast finishes cooking, place cubed potatoes in a pot of salted water. Bring to a boil and cook for 15–20 minutes, until tender. Drain well.
Step 7: Mash Until Creamy
Mash the potatoes with butter, warm milk, salt, and pepper until smooth and fluffy. Adjust seasoning to taste.
Step 8: Finish the Roast
Remove the pot roast from the pot and let it rest for 10 minutes. Slice or shred the beef. Taste the cooking liquid and adjust seasoning if needed.
Step 9: Assemble the Dish
Spoon a generous portion of mashed potatoes onto each plate. Top with tender beef, carrots, and onions. Drizzle with the savory gravy from the pot.
