Ingredients

  • 01 1 pound lean ground beef (93%-7% fat ratio)
  • 02 4 tablespoons bottled smoky style barbecue sauce, divided
  • 03 ½ teaspoon salt
  • 04 ¼ teaspoon black pepper
  • 05 8 slices smoked bacon, uncooked
  • 06 4 slices fresh pineapple, ½ inch thick with core removed
  • 07 4 bakery style burger buns, Brioche style used

Steps

Step 01

Preheat the oven to 400°F. Line a large rimmed baking sheet with aluminum foil and an oven-safe wire rack and set aside.

Step 02

In a large bowl, mix the ground beef, 2 tablespoons barbecue sauce, salt, and black pepper. Avoid overworking the meat to keep the burgers tender.

Step 03

Divide the ground beef mixture into four equally sized patties, approximately 4 ounces each, 3 ½ inches in diameter, and ½ inch thick.

Step 04

On a tray or cutting board, lay two bacon slices in an X pattern. Place one patty in the center, add a pineapple slice on top, and fold the bacon over. Secure with a toothpick.

Step 05

Repeat the bacon-wrapping process for the remaining patties. Place each assembled burger on the prepared baking sheet.

Step 06

Bake the burgers for 15 minutes. Remove the sheet, brush the remaining 2 tablespoons of barbecue sauce onto the bacon, then return to the oven for another 10-15 minutes, or until the internal temperature reaches 160°F.

Step 07

Toast the burger buns, if desired, while the burgers finish cooking.

Step 08

Remove the burgers from the oven and let them rest for 5 minutes to allow the juices to redistribute. Serve on burger buns with optional toppings or condiments.

Tips

  • The USDA recommends cooking ground beef to an internal temperature of 160°F-165°F for safe consumption.
  • You can substitute fresh pineapple slices with canned pineapple rings packed in 100% juice. Pat them dry before use.
  • For extra flavor, choose barbecue sauces like sweet & spicy, honey barbecue, or hickory brown sugar.
  • Standard or center-cut smoked bacon works best for even crispness during cooking.
