Prep and Sauté the Peppers and Onion:

In a large pan heat the oil over medium-high until shimmering then add all the chopped peppers and onion. Sauté for about five to seven minutes stirring often until the veggies turn soft and edges start to slightly caramelize. Scoop them from the pan and set aside.

Brown the Ground Beef:

In the same pan over medium-high break up the ground beef with a spoon. Let it cook undisturbed for two to three minutes to get some browning then stir and keep cooking until no pink remains about six to eight minutes. Season well with salt and pepper. If your beef releases a lot of fat tilt the pan and spoon out excess so the mixture is not greasy.

Combine and Build the Filling:

Return the sautéed peppers and onion to the pan with the beef. Drop in the cream cheese in pieces for easier melting. Add the ketchup, Worcestershire sauce, garlic powder, a half cup of water and sprinkle more salt and pepper. Stir everything together thoroughly. Keep the heat at medium and let the mixture simmer five to seven minutes until sauce thickens and mixture looks cohesive and bubbling.

Melt in the Cheese:

Turn off the heat. Scatter shredded cheese right over the beef mixture. Fold everything together just until the cheese melts and pulls into strings. Taste and add more salt or pepper if needed.

Serve it Up:

Toast your hamburger buns either on a skillet or in a toaster for a little crunch. Load each with a big scoop of cheesesteak mixture. For extra flair add a pinch more shredded cheese on top while still hot.
