Directions
- Preheat oven to 180°C (350°F).
- Blend the fresh red chillies with softened butter until smooth. Fold in paprika.
- Gently lift the skin of the chicken and stuff the spicy butter mixture into the pockets under the skin.
- Drizzle the chicken with olive oil and sprinkle with sea salt.
- Roast the chicken in the preheated oven for 1 hour 30 minutes, or until the juices run clear when pierced.
- Remove from the oven and let the chicken rest in the pan for 5 minutes. Transfer to a platter and serve.
