Peri-Peri Roast Chicken

Directions

  1. Preheat oven to 180°C (350°F).
  2. Blend the fresh red chillies with softened butter until smooth. Fold in paprika.
  3. Gently lift the skin of the chicken and stuff the spicy butter mixture into the pockets under the skin.
  4. Drizzle the chicken with olive oil and sprinkle with sea salt.
  5. Roast the chicken in the preheated oven for 1 hour 30 minutes, or until the juices run clear when pierced.
  6. Remove from the oven and let the chicken rest in the pan for 5 minutes. Transfer to a platter and serve.
