Pearl Couscous Vegetable Soup

Instructions:

1. In a large pot, heat olive oil and sauté onion and garlic until translucent.

2. Add chopped vegetables and cook for a few minutes.

3. Pour in canned tomatoes and broth, bring to a boil.

4. Add couscous and simmer until tender (about 10 minutes).

5. Stir in beans and herbs, and simmer for another 5 minutes.

6. Adjust seasoning with salt and pepper.

7. Serve hot with bread or on its own.
