3. Next, sift in the all-purpose flour, baking powder, and salt. Stir the mixture gently until it resembles a crumbly texture, taking care not to overmix.
4. Take about two-thirds of this crumb mixture and press it firmly into the bottom of your prepared baking pan to create a solid crust.
5. In another bowl, toss your chopped peaches with cornstarch, lemon juice, sugar (for the peach filling), and cinnamon. Ensure the peaches are well-coated for maximum flavor.
6. Spread the peach mixture evenly over the crust in the pan, allowing the juice to seep into the base for added moisture.
7. Sprinkle the remaining crumb mixture over the peach filling, ensuring even coverage.
