Directions
- Preheat Oven: Set the oven to 450°F (230°C).
- Cook the Beef: In a large sauté pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the ground beef and break it up with a wooden spoon.
- Season: Add the finely chopped onion, cumin, coriander, chili powder, salt, and black pepper. Cook, stirring occasionally, for about 6 minutes.
- Add Garlic: Mince the garlic and stir it into the beef during the last 2 minutes of cooking. Remove the pan from heat.
- Warm Tortillas: Place 2 tortillas directly on the upper oven rack for about 30 seconds to soften. Remove carefully and place on a cutting board. Repeat in batches as needed.
- Assemble Taquitos: Spoon 2 tablespoons of the beef mixture onto the right side of each tortilla. Sprinkle with 1 tablespoon of grated cheese. Roll tortillas tightly and place them seam-side down on a cookie sheet. Repeat with the remaining tortillas.
- Brush & Season: Lightly brush the tops of the rolled taquitos with vegetable oil and sprinkle with a pinch of salt.
- Bake: Bake in the preheated oven for 10 minutes or until the tops are lightly toasted and the cheese inside is melted.
- Serve: Serve the baked taquitos hot with your favorite dips such as guacamole, sour cream, or salsa.
