One Pot Lasagna Soup

Directions

  1. In a large pot over medium-high heat, cook ground beef, Italian sausage, and chopped onion until browned. Drain excess fat.
  2. Return the pot to the stove, add minced garlic, and sauté for about 30 seconds until fragrant.
  3. Pour in pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf, and season with salt and pepper. Stir to combine.
  4. Cover the pot and bring to a boil.
  5. Break lasagna noodles into pieces and add to the pot. Reduce heat to medium-low and cook until noodles are tender.
  6. Remove bay leaf, taste, and adjust seasoning if needed.
  7. Serve hot, topped with Parmesan, mozzarella, or ricotta cheese.
