No-Bake Strawberry Cheesecake

Step 1 – Prepare the Crust

Start by lining the bottom of a 9-inch springform pan with parchment paper. Do not grease the sides, as this helps the cheesecake set properly.

In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix well until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of your prepared pan, creating an even layer. This will form the perfect buttery base for your cheesecake.

Step 2 – Make the Cream Cheese Filling

First, remove 3 tablespoons of the powdered sugar from the cup you measured. Set it aside.

In the bowl of an electric mixer, combine these 3 tablespoons of sugar with the vanilla extract and whipping cream. Beat until firm peaks form, then transfer this whipped cream to a separate bowl.

Now, take the remaining powdered sugar and cream cheese, and beat together in the mixer until smooth and creamy.

Next, fold ½ cup of the whipped cream into the cream cheese mixture and beat again until smooth. This step softens the cream cheese mixture for easier folding.

Finally, fold in the remaining whipped cream by hand using a rubber or silicone spatula. Spread the mixture evenly over the prepared crust. Cover and chill in the fridge for several hours or overnight. The longer it chills, the firmer the cheesecake will be.

Step 3 – Prepare the Strawberry Topping

In a saucepan, combine the strawberries and sugar, bringing them to a gentle boil. Once they release their juices, stir in the cornstarch dissolved in cold water. Cook gently for 1 minute, stirring constantly until the mixture thickens.

Allow the topping to cool completely to room temperature before spooning it evenly over the chilled cheesecake. Chill again for several hours before serving. For the best flavor and texture, it’s ideal to make this cheesecake a day in advance.

Step 4 – Serving Suggestions

Once chilled, garnish with extra whipped cream and fresh strawberries for a beautiful presentation. Slice carefully with a sharp knife for neat pieces, and serve cold.
