No-Bake Coconut Pecan Praline Cookies

Directions

Step 1: Prepare a Baking Sheet

Line a large baking sheet with parchment paper or a silicone baking mat. This will prevent the cookies from sticking once formed.

Step 2: Make the Praline Sauce

In a medium saucepan over medium heat, combine the sugar, butter, milk, and cocoa powder. Stir continuously until the butter is melted and the mixture comes to a rolling boil. Allow to boil for 1–2 minutes, stirring constantly to prevent burning.

Step 3: Add Peanut Butter and Vanilla

Remove the saucepan from heat. Stir in the peanut butter and vanilla extract until fully incorporated and smooth.

Step 4: Combine Dry Ingredients

In a large mixing bowl, combine the oats, shredded coconut, and chopped pecans. Pour the hot praline mixture over the dry ingredients. Mix quickly and thoroughly to coat all the oats and nuts evenly.

Step 5: Form the Cookies

Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Shape them slightly with the back of the spoon if desired.

Step 6: Let Set

Allow the cookies to cool and set at room temperature for at least 30–40 minutes. They will firm up as they cool, forming the perfect chewy texture.

Step 7: Serve and Enjoy

Once set, enjoy these cookies as a snack, dessert, or even a sweet treat with your coffee or tea.
