Mashed Potato Pancakes with Meat Filling

1. Prepare the Filling:
In a skillet over medium heat, heat 1 tbsp of oil.

Add chopped onion and sautรฉ until translucent (2โ€“3 minutes).

Add garlic and cook for another 30 seconds.

Add ground meat, break it up with a spatula, and cook until browned and fully cooked.

Season with paprika, salt, pepper, and parsley (if using).

Let the filling cool slightly.

2. Make the Dough:
In a bowl, mix cold mashed potatoes, egg, flour, salt, and pepper until you have a soft, pliable dough.

If too sticky, add a little more flour.

3. Assemble the Pancakes:
Lightly flour your hands and work surface.

Take a scoop of dough (about 2 tbsp), flatten it into a round patty in your palm.

Place 1 spoonful of the meat filling in the center.

Take another small piece of dough and cover the filling, sealing the edges. Shape into a thick pancake.

Repeat until all dough and filling are used.

4. Cook the Pancakes:
Heat a few tablespoons of vegetable oil in a non-stick skillet over medium heat.

Fry the pancakes for 3โ€“4 minutes per side, or until golden brown and crispy.

Transfer to a paper towel-lined plate to remove excess oil.
