Marinated Cucumbers, Onions & Tomatoes

Instructions:

  1. Prep veggies → In a large bowl, combine cucumbers, tomatoes, and onion rings.
  2. Make marinade → In a separate bowl, whisk together vinegar, oil, sugar, water, salt, pepper, basil, and parsley until well blended.
  3. Combine → Pour the marinade over the veggies and toss gently to coat.
  4. Chill → Cover and refrigerate for at least 2 hours (overnight is even better — the flavor gets stronger).
  5. Serve → Stir before serving, and enjoy as a refreshing side with grilled meats, BBQ, or just with bread.
