Magic Lemon Cobbler

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Place the butter in a 9×9-inch (23×23 cm) baking dish and melt in the oven for 3–4 minutes. Remove and set aside.
  3. In a medium bowl, whisk together flour, baking powder, and salt. Add the sugar and mix well.
  4. Stir in the buttermilk, vanilla extract, and lemon extract until just combined.
  5. Pour the batter evenly over the melted butter in the baking dish—do not stir.
  6. Spoon the lemon pie filling evenly over the batter.
  7. Bake for 45–55 minutes, or until the edges are golden brown and the cobbler is set.
  8. Cool slightly before serving. Enjoy warm with ice cream or whipped cream.
