Directions

- In a medium bowl, whisk together flour, baking powder, and salt. Add the sugar and mix well.
- Stir in the buttermilk, vanilla extract, and lemon extract until just combined.
- Pour the batter evenly over the melted butter in the baking dish—do not stir.
- Spoon the lemon pie filling evenly over the batter.
- Bake for 45–55 minutes, or until the edges are golden brown and the cobbler is set.
- Cool slightly before serving. Enjoy warm with ice cream or whipped cream.
