Directions

  1. Preheat the oven according to the cake mix muffin instructions, or 350°F (175°C) as a general guideline.
  2. In a large mixing bowl, combine the cake mix, lemon pudding mix, eggs, and vegetable oil. Mix until the batter is smooth and lump-free.
  3. Prepare a muffin tin by greasing it or lining with paper muffin cups.
  4. Fill each muffin cup about two-thirds full with batter.
  5. Bake according to the package instructions for muffins, typically 10–12 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the muffins bake, prepare the glaze. In a bowl, whisk together confectioners’ sugar, lemon juice, lemon zest, vegetable oil, and water until smooth and pourable.
  7. Allow the muffins to cool slightly in the tin after baking.
  8. Dip the warm tops into the glaze for a generous coating or drizzle the glaze artistically over each muffin.
  9. Let the glaze set before serving.
