Directions
- Place corned beef brisket in the Instant Pot, fat side up.
- Pour in water or beef broth. Add the included spice packet, onion, garlic, and optional peppercorns and bay leaf.
- Seal the lid and set Instant Pot to Manual/Pressure Cook on high for 90 minutes.
- When cooking time is complete, allow natural pressure release for 15 minutes, then carefully release any remaining pressure.
- Remove corned beef and let rest 5–10 minutes before slicing against the grain.
- Meanwhile, add carrots, celery, and potatoes to the broth in the Instant Pot. Close lid and cook on high pressure for 3–4 minutes. Quick release pressure when done.
- Serve sliced corned beef with the cooked vegetables and a ladle of cooking liquid.
