Instant Pot Corned Beef 

Directions

  1. Place corned beef brisket in the Instant Pot, fat side up.
  2. Pour in water or beef broth. Add the included spice packet, onion, garlic, and optional peppercorns and bay leaf.
  3. Seal the lid and set Instant Pot to Manual/Pressure Cook on high for 90 minutes.
  4. When cooking time is complete, allow natural pressure release for 15 minutes, then carefully release any remaining pressure.
  5. Remove corned beef and let rest 5–10 minutes before slicing against the grain.
  6. Meanwhile, add carrots, celery, and potatoes to the broth in the Instant Pot. Close lid and cook on high pressure for 3–4 minutes. Quick release pressure when done.
  7. Serve sliced corned beef with the cooked vegetables and a ladle of cooking liquid.
