- Prepare the candied walnuts: In a small saucepan, combine honey and water over medium heat. Stir occasionally until the mixture thickens slightly. Add walnut halves and stir to coat evenly. Spread on a parchment-lined baking sheet and allow to cool.
- Make the sweet sauce: In a medium bowl, whisk together mayonnaise, honey, and yogurt until smooth. Set aside.
- Prepare the shrimp: In a shallow dish, combine cornstarch, salt, and black pepper. In another shallow dish, whisk together egg and water. Dip each shrimp first in the cornstarch mixture, then in the egg mixture, and again in the cornstarch mixture.
- Fry the shrimp: Heat about 1 inch of vegetable oil in a skillet or wok over medium-high heat until hot. Fry shrimp in batches for 2–3 minutes per side, until golden brown and crispy. Transfer cooked shrimp to a wire rack to drain excess oil.
- Assemble: Once all shrimp are cooked, drizzle with the sweet sauce and sprinkle with candied walnuts. Serve immediately over steamed rice or on its own.
