Step 1: Season the Beef
Pat the chuck roast dry with paper towels. Season all sides generously with salt, black pepper, paprika, and garlic powder, pressing the spices gently into the meat.
Step 2: Sear for Flavor
Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side until a deep golden-brown crust forms. This step adds rich flavor to the final dish.
Step 3: Prepare the Crockpot
Place the sliced onions at the bottom of the crockpot, creating a flavorful base that prevents the meat from sticking.
Step 4: Add the Roast and Vegetables
Place the seared roast on top of the onions. Arrange the potatoes and carrots around the meat, tucking them in so they’ll soak up the juices as they cook.
Step 5: Mix the Liquid
In a bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, and soy sauce. Pour the mixture evenly over the roast and vegetables.
Step 6: Add Herbs
Nestle the rosemary, thyme, and bay leaves into the liquid around the roast. As they cook, they’ll infuse the broth with a warm, earthy aroma.
Step 7: Slow Cook
Cover and cook on low for 8–9 hours or on high for 4–5 hours, until the beef is fork-tender and easily pulls apart.
Step 8: Thicken the Gravy (Optional)
If you prefer a thicker gravy, remove the roast and vegetables. Whisk cornstarch with 2 tablespoons of cold water, stir into the liquid, and cook on high for 10–15 minutes until thickened.
Step 9: Serve
Remove bay leaves and herb stems. Slice or shred the roast and serve hot with vegetables and plenty of gravy spooned over the top.
