Directions
- Coat the inside of the crockpot with cooking spray.
- Place the chicken in the bottom of the crockpot. Add the sliced onion, French onion soup, rice, beef broth, and Lipton Onion Soup mix. Stir gently to combine.
- Cover and cook on low for 5–6 hours or on high for 2–3 hours until the chicken is cooked through and the rice is tender.
- About 15–20 minutes before serving, add shredded mozzarella and provolone cheeses along with the fried onions. Cover and cook until the cheeses have melted.
- Serve warm and enjoy as a hearty, cheesy one-pot meal.
