Step 1: Prepare the Beef
Pat the beef cubes dry with paper towels and season generously with salt and black pepper. This step helps the meat brown properly and develop deeper flavor.
Step 2: Brown the Beef
Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches, browning all sides until a deep golden crust forms. The aroma at this stage is rich and savory. Transfer the beef to the crockpot.
Step 3: Sauté Aromatics
In the same skillet, add the chopped onion and cook for 3–4 minutes until soft and lightly golden. Add the garlic and cook for 30 seconds until fragrant.
Step 4: Cook the Mushrooms
Add the mushrooms to the skillet and cook for about 5 minutes, stirring occasionally, until they release their moisture and begin to brown. This step intensifies their earthy flavor.
Step 5: Deglaze the Pan
Stir in the tomato paste, Worcestershire sauce, and soy sauce. Pour in a splash of beef broth and scrape up the browned bits from the bottom of the pan—this is where a lot of flavor lives.
Step 6: Assemble the Crockpot
Transfer the onion and mushroom mixture to the crockpot. Add carrots, celery, and potatoes if using.
Step 7: Thicken the Broth
In a small bowl, whisk the flour with a few tablespoons of beef broth until smooth. Pour this mixture into the crockpot, followed by the remaining beef broth.
Step 8: Season and Cook
Add thyme, rosemary, bay leaves, and adjust seasoning with salt and pepper. Stir gently to combine.
Step 9: Slow Cook
Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is fork-tender and the stew is thick and glossy.
Step 10: Finish and Serve
Remove bay leaves before serving. Taste and adjust seasoning. Garnish with fresh parsley for a pop of color and freshness.
