Directions

  1. In a large skillet over medium heat, brown the ground beef, breaking it into small pieces. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent, about 5 minutes.
  3. Stir in the taco seasoning mix, coating the beef evenly.
  4. In a 6-quart slow cooker, combine the beef mixture with black beans, corn, diced tomatoes, and frozen diced potatoes.
  5. Cover and cook on low for 6–8 hours, or on high for 3–4 hours, until the potatoes are tender and flavors meld.
  6. Sprinkle shredded cheddar cheese over the top and let it melt for 5–10 minutes.
