Ingredients
- 2 cups all-purpose flour
- ½ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk
- ⅓ cup vegetable oil
- 1 large egg
- 1 tsp lemon zest
- 1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 375°F (190°C). Line muffin pan.
- Mix dry ingredients. Whisk wet ingredients separately.
- Combine wet and dry ingredients. Fold in lemon zest and blueberries.
- Bake 20–25 minutes until golden.
