Cheesy Sausage and Egg Wraps

Simple Step-by-Step

Heat and Serve:
Lay the wraps in a dry pan over medium until the outside is golden and cheese softens inside, about one to two minutes for each side. This crisps them slightly, making eats less messy.

Roll the Wraps:
Tuck in the edges and roll up each tortilla firmly so everything stays put. Tight rolling means you lose less filling and can eat it on the go.

Assemble Wraps:
Microwave or skillet-heat the tortillas until soft and easy to fold. Scoop a quarter of the eggs into each center, layer sausage and pile cheese on top. When eggs are warm, the cheese already starts to melt.

Scramble the Eggs:
Beat eggs in a bowl with milk, pepper, and salt. Drop butter into your skillet on medium, pour in the mix, and stir slowly with a spatula. Stop when eggs are just barely set and still moist to avoid that rubbery texture.

Cook the Sausage:
Brown sausage pieces in a pan on medium till fully cooked and no pink remains, about ten minutes. Shift to a plate to drain and use the same pan for your eggs — keeps things speedy and gives eggs a tad of sausage flavor.
