Directions
- Preheat oven to 375°F (190°C).
- In a large bowl, gently combine ground beef, onion, breadcrumbs, milk, egg, salt, and pepper. Press mixture into a 9×9-inch baking dish.
- Bake uncovered for 15 minutes, then remove and drain any excess fat.
- While the meatloaf is baking, place potatoes in a pot with just enough water to cover. Bring to a boil over high heat and cook for 15 minutes until tender.
- Drain the water and mash the potatoes with milk, butter, salt, and pepper until creamy.
- Spread the mashed potatoes evenly over the partially baked meatloaf. Top with shredded cheddar and bacon bits.
- Return to the oven and bake an additional 15 minutes, until the cheese is melted, bacon is sizzling, and mashed potatoes have slightly crisped.
- Slice and serve immediately.
