Cheesy Bacon Mashed Potato Meatloaf

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, gently combine ground beef, onion, breadcrumbs, milk, egg, salt, and pepper. Press mixture into a 9×9-inch baking dish.
  3. Bake uncovered for 15 minutes, then remove and drain any excess fat.
  4. While the meatloaf is baking, place potatoes in a pot with just enough water to cover. Bring to a boil over high heat and cook for 15 minutes until tender.
  5. Drain the water and mash the potatoes with milk, butter, salt, and pepper until creamy.
  6. Spread the mashed potatoes evenly over the partially baked meatloaf. Top with shredded cheddar and bacon bits.
  7. Return to the oven and bake an additional 15 minutes, until the cheese is melted, bacon is sizzling, and mashed potatoes have slightly crisped.
  8. Slice and serve immediately.
