Cajun Steak Tips in Cheesy Rigatoni Parmesan Sauce

👨‍🍳 Instructions

  1. Cook the Pasta
    Boil rigatoni in salted water until al dente. Drain, reserving ½ cup of the pasta water. Set aside.
  2. Cook the Steak Tips
    • Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
    • Add steak pieces, sprinkle with Cajun seasoning, garlic powder, paprika, salt, and pepper.
    • Sear for 2–3 minutes on each side until browned and cooked to your liking.
    • Remove steak and set aside on a plate.
  3. Make the Creamy Sauce
    • In the same skillet, add 2 tbsp butter and minced garlic. Sauté for 1 minute.
    • Sprinkle in flour and whisk for 30 seconds to create a roux.
    • Slowly pour in the heavy cream and milk, whisking constantly until smooth.
    • Stir in mozzarella and Parmesan cheese until melted and creamy.
    • Season with salt, pepper, and Cajun seasoning (to taste).
  4. Combine Everything
    • Add cooked rigatoni to the sauce and toss until fully coated.
    • Return the steak tips (and any juices) to the pan and stir gently.
    • Add a splash of reserved pasta water if the sauce is too thick.
  5. Serve
    Garnish with chopped parsley and extra Parmesan. Serve hot!

  • Use freshly grated cheese for the best melt and flavor.
