- Cook the Pasta
Boil rigatoni in salted water until al dente. Drain, reserving ½ cup of the pasta water. Set aside. - Cook the Steak Tips
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
- Add steak pieces, sprinkle with Cajun seasoning, garlic powder, paprika, salt, and pepper.
- Sear for 2–3 minutes on each side until browned and cooked to your liking.
- Remove steak and set aside on a plate.
- Make the Creamy Sauce
- In the same skillet, add 2 tbsp butter and minced garlic. Sauté for 1 minute.
- Sprinkle in flour and whisk for 30 seconds to create a roux.
- Slowly pour in the heavy cream and milk, whisking constantly until smooth.
- Stir in mozzarella and Parmesan cheese until melted and creamy.
- Season with salt, pepper, and Cajun seasoning (to taste).
- Combine Everything
- Add cooked rigatoni to the sauce and toss until fully coated.
- Return the steak tips (and any juices) to the pan and stir gently.
- Add a splash of reserved pasta water if the sauce is too thick.
- Serve
Garnish with chopped parsley and extra Parmesan. Serve hot!
💡 Tips
- For extra spice, add crushed red pepper or more Cajun seasoning.
- Use freshly grated cheese for the best melt and flavor.
- Let the steak rest 5 minutes before adding it to the sauce to keep it juicy.
