Directions

  1. Preheat your oven to 400°F (200°C). Line a baking pan with parchment paper or lightly grease it.
  2. In a large bowl, toss the mushrooms with olive oil, balsamic vinegar, soy sauce, garlic, thyme, salt, and pepper until evenly coated.
  3. Arrange the mushrooms in a single layer on the prepared baking pan.
  4. Roast in the preheated oven for about 20 minutes, stirring halfway through to ensure even cooking.
  5. The mushrooms are done when they are tender, slightly caramelized, and fragrant.
