Baked Ham with Brown Sugar, Mustard, and Cola

Directions

  1. In a large casserole or stockpot, place the ham and stud it with the cloves. Cover with water and beer. Add molasses, chopped onions, and bay leaf. Season with salt and pepper.
  2. Bring to a boil, then reduce heat and simmer gently for 2 hours, allowing the flavors to meld.
  3. In a small bowl, mix the breadcrumbs and brown sugar into a paste, adding a little water to achieve a spreadable consistency.
  4. Preheat the oven to 200°C (390°F). Transfer the ham to a baking dish and cover it with the brown sugar-breadcrumb paste. Bake for 30 minutes, until golden brown.
  5. In a skillet, melt the butter and brown the pineapple slices. Add the pineapple juice and some of the ham cooking liquid, reducing until it forms a thick glaze. Season with salt and pepper.
  6. Arrange the pineapple slices on the ham, pour the glaze over, and serve in slices.
