Directions
- In a large casserole or stockpot, place the ham and stud it with the cloves. Cover with water and beer. Add molasses, chopped onions, and bay leaf. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer gently for 2 hours, allowing the flavors to meld.
- In a small bowl, mix the breadcrumbs and brown sugar into a paste, adding a little water to achieve a spreadable consistency.
- Preheat the oven to 200°C (390°F). Transfer the ham to a baking dish and cover it with the brown sugar-breadcrumb paste. Bake for 30 minutes, until golden brown.
- In a skillet, melt the butter and brown the pineapple slices. Add the pineapple juice and some of the ham cooking liquid, reducing until it forms a thick glaze. Season with salt and pepper.
- Arrange the pineapple slices on the ham, pour the glaze over, and serve in slices.
