Bacon Wrapped Chicken Breast

Instructions

  1. Preheat oven: Set oven to 180°C / 350°F.
  2. Season chicken: Rub the chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Wrap with bacon: Wrap each chicken breast with two strips of bacon. Start with one strip, then add the second strip, pressing the ends down against the chicken.
  4. Sear chicken: Heat olive oil and butter in a skillet over medium-high heat. Place chicken seam-side down and cook until bacon is golden, about 3–4 minutes. Do not flip.
  5. Add sugar and bake: Sprinkle each chicken breast with 1 tablespoon of brown sugar. Transfer the skillet to the oven and bake for 15 minutes or until the chicken is cooked through.
  6. Broil for finish: Turn on the broiler and broil the chicken for 4 minutes to caramelize the top.
  7. Serve: Remove from oven and let rest briefly before serving.

Notes

  • To Store: Allow chicken to cool, then refrigerate in an airtight container for 3–5 days.
  • To Freeze: Freeze uncooked assembled chicken or cooked chicken once cooled for up to 2–3 months.
  • To Reheat: Microwave for a few seconds, or re-sear in a skillet over medium heat.
